Creamy Pumpkin Cheesecake Smoothie ~ Exceptionally delicious smoothie recipe using nutritious ingredients. It really does taste like a pumpkin cheesecake!
I am sharing this Creamy Pumpkin Cheesecake Smoothie recipe at the end of October because it is perfect to enjoy on Halloween. My daughters are adults now but I remember Halloween was a very busy day in our household. It was particularly busy for me because I worked as an elementary school teacher. So I spent all day with my students doing Halloween activities. Then I continued with the Halloween fun with my own children once a got home. My husband always took them out trick-or-treating and I stayed home to hand out the treats. I always heaved a sigh of relief when Halloween night fell on a weekend night so I could sleep in the next day. But that did not always happen. There were also many Halloween nights where it landed on a week night and it was show up at work the next day with equally tired students.
To keep things simple, I always planned a low maintenance dinner that took very little preparation and very little clean-up. I still wanted my daughters to eat something that was nutritious and filling before the trick-or-treating fun began. A simple dinner including a grill cheese sandwich served with veggies and dip was perfect! The veggies were prepared ahead of time and the grill cheese took minutes to put together and cook on the stove.
This Creamy Pumpkin Cheesecake Smoothie is also perfect to make and serve with the grill cheese and veggies. It is quick to prepare and it is so yummy it can double as a beverage and a dessert. Just don’t tell the kids it is loaded with healthy ingredients!
This recipe comes from one of my new favourite cookbooks. The cookbook title is “Pumpkin Cheesecake in A Glass” and the cookbook is Superfood Juicing & Smoothies from the Company’s Coming Practical Gourmet series. I changed the title and slightly altered the preparation method. The cookbook recipe instructions say to add the ice cubes last. But I prefer to add them first and use the ice crusher function on the blender to crush the ice cubes before adding the rest of the ingredients.
Here is how to make a totally delicious:
Creamy Pumpkin Cheesecake Smoothie
- 8 ice cubes
- 1 frozen banana
- 4 dates
- ¼ cup pecans
- 1 -1/2 cups canned pumpkin
- ¼ cup cream cheese
- ½ tsp cinnamon
- sprinkle ground nutmeg
- sprinkle ground allspice
- 1 tsp vanilla extract
- 1 cup unsweetened vanilla almond milk
- Crush the ice cubes in the blender.
- Add the rest of the ingredients and blend until smooth.
Final Comments: This Creamy Pumpkin Cheesecake Smoothie is loaded with vitamins and fibre from all of the fruit as well as protein from the pecans and almond milk. The spices give it the special taste and the cream cheese gives it the creamy texture. I love that there are no extra sugars added. All of the sweetness comes from the natural ingredients! That makes it a great recipe to serve before the kids go out trick-or-treating where you know they will get their fill of sugar from all of the collected treats.
That being said, a Creamy Pumpkin Cheesecake Smoothie can be enjoyed anytime of the year! It is made with ingredients available all year in the grocery stores.
