Big Batch Coconut Oatmeal Cookies ~ Easy recipe to bake that makes a big batch of crunchy, tasty snacking cookies perfect to have handy in the freezer.
I thought it would be timely to share one of my favourite cookie recipes at this time of year. It is Back To School and that means back to making school lunches five days a week. It also means the after school sport activities and lessons are starting up again.
Back To School time was a very busy time in my household when my daughters were young. I had to get everything organized for them as well as myself because I was an elementary school teacher. One of the things I spent time preparing were the school and after school activity snacks. I knew that once I was into the full swing of things I would not have a lot of time to do much home baking. So I always made the time to get a bunch of baking done during the final week of August.
Big Batch Coconut Cookies is one of my standard recipes to bake. It is a family favourite. I don’t know which ingredient or maybe that it is the combination of ingredients that gives it a really nice flavour when you bite into one and start chewing. It is perfect for all of the coconut and/or oatmeal fans!
I call this recipe Big Batch Coconut Oatmeal cookies because it makes about 5-dozen cookies. I also love this particular recipe because it is very low fuss to bake. The cookies are crunchy and they freeze very well. I have even made up packages of these cookies and sent them in the mail as gifts and to my daughters when they were away at university.

Big Batch Coconut Oatmeal Cookies
- 2 cups butter
- 3 cups brown sugar
- 2 eggs
- 3 cups all purpose flour
- 2 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. salt
- 3 cups rolled oats
- 1-1/2 cups shredded coconut
- 2 tsp. vanilla
- white granulated sugar
- Cream together butter and sugar in a large mixing bowl. Beat in eggs.
- Sift together flour baking powder, baking soda and salt. Mix into creamed mixture.
- Add rolled oats, coconut and vanilla. Combine thoroughly.
- Shape dough into balls and place on lightly greased cookie sheets. Press balls down with a fork dipped in sugar.
- Bake at 350° F (180°C) for 10-12 minutes or until lightly browned.
