I can’t believe that we are already into the month of August and summer vacation in my end of the world will be ending in a few weeks! When it comes to family traditions we often think of Christmas time and birthdays. But when you think about it summer is also a time perfect for celebrating favourite old ones as well as adopting new family traditions.
Summer family traditions can range from going camping every year to your favourite camping spot, going on that favourite family hike, attending the same yearly town fair, roasting hotdogs and making s’mores around the campfire or enjoying the same favourite classic chocolate cake for summer snacks and desserts!
When I my daughters were young I thought it was important to build in some special summer activities that we could look forward to every summer. One such family activity that I felt was to go blueberry picking as a family. I think I started the tradition when my daughters were about seven and ten years old. I felt it was important for them to appreciate and enjoy healthy food like blueberries. So I thought it was important for them to see how they are grown and participate in how they are harvested. So I insisted the whole family drive to one of my favourite produce farms, Covert Farms (not sponsored) and with a variety of buckets spend the morning picking blueberries in the huge blueberry patch.
The weather conditions were always very hot and dry, which made the whole experience quite uncomfortable. There was a tall gate to get in and a tall fence all around the blueberry patch and a gate to get in. When my daughters found out it was there to keep the bears out that really added to their discomfort. It also took a long time and a lot of hand picking to fill a bucket. Needless to say the polite complaining even from my husband started after about an hour. I think they preferred to be having fun in the lake swimming and water skiing than in the hot dry blueberry patch. This was one of those family traditions that in reality only lasted a couple of years because nobody really enjoyed it much. But it provided a lot of fun and giggles for many years afterwards. As my daughters grew older they loved giving me a bad time about that family tradition and only went along with it obligingly because they knew it was really important to me. I don’t blame them because it was loads of work in pretty hot uncomfortable conditions.
There is one summer family tradition that has been around for many years and has even come down from the previous generation. This one is a keeper. Every summer we made and enjoyed many times over this basic classic chocolate cake. It isn’t super rich and moist and filled with decadent ingredients. It is just a recipe for a basic classic chocolate cake that is quick and easy to prepare and bake and always turns out. My youngest daughter asked for the round version with chocolate frosting in the middle recently for her July birthday. But I have to admit I usually just bake it in 13” x 9” baking pan and spread the easy to make chocolate frosting on top. The recipe also makes some pretty tasty chocolate cupcakes! If you make the round version with the chocolate frosting in the middle I recommend that you double the recipe to make sure you have enough.
My mother-n-law always baked this recipe for summer snacks and desserts. That recipe was then passed on to my sister-n-law and myself and it was perfect to bake when the families got together because it was a no-fuss recipe. Nobody wanted to be in the kitchen for a long time when it was gorgeous outside.
But the funny part was everyone in the family loved the recipe so much that when we had dinner at each other’s homes that was the go-to dessert for many summers. It had definitely become a family tradition.
We don’t get together as much as we used to now because the cousins have grown and are living in different areas pursuing their own schooling and careers. I still like to bake this classic chocolate cake because I have to admit it is one of my favourites and it sure satisfies a chocolate craving. You don’t have to just bake it in the summer. It is perfect anytime of the year!
Here is the recipe for…
Classic Chocolate Cake
- ½ cup butter, softened
- 1 ½ cup granulated sugar
- 2 eggs
- 1 cup milk
- 1 tsp. vinegar
- 2 cups all purpose flour
- 1 tsp. baking soda
- 1 tsp. baking powder
- ½ cup cocoa
- ½ cup boiling water
- ⅓ cup butter
- Chocolate Frosting
- 3 cups icing sugar
- ½ cup cocoa
- dash salt
- ¼ cup milk
- Cream butter, sugar, eggs using an electric mixer.
- Combine flour, baking soda, baking powder.
- Combine milk and vinegar.
- Alternating, add dry ingredients and milk and vinegar to creamed mixture, mixing at low speed.
- Mix cocoa and boiling water. Blend into cake batter at low speed.
- Pour batter into a 13’ x 9” rectangular baking pan, two round cake pans or 12 muffin pans.
- Bake for 30 minutes at 350°.
- Frost with chocolate frosting after the cake has cooled.
- Chocolate Frosting - Cream butter and icing sugar at low speed. Add cocoa and salt to creamed mixture. Slowly add milk . Mix on high speed till desired consistency.
This is an old recipe that has been around for a long time. That is why I call it a Classic Chocolate Cake. It will be interesting to see how long it will continue to be a summer family tradition!
By the way… my daughters love to eat blueberries so maybe that suspended family tradition of picking blueberries made a bit of an impact!
