Protein Rice Cereal Bars ~These bars are easy to prepare, have a wonderful vanilla flavour and the added protein make them a more nutritious snack!
I have made these Protein Rice Cereal Bars for years while my daughters were busy training and competing in their favourite sports programs. My older daughter competed as a synchronized swimmer so I spent a lot of time hanging around pools. My younger daughter was a basketball and volleyball player so I also spent a lot of time in different gymnasiums all over the province.
The synchronized swimmer trained about 12 hours a week on top of her school studies. Most of the time was spent in the water but a significant amount of time was also spent working on fitness with a fitness trainer outside of the pool. She trained and competed for quite a few years and at the peak of her career she was able to swim 2 ½ lengths of a competitive pool underwater without taking a breath and simply by sculling.
My younger daughter loved both her volleyball and basketball and played on several teams throughout the year. She had practices everyday after school on top of her weekly scheduled games and weekend tournaments throughout the playing season.
With the amount of training, playing and competing both my daughters did, making sure they were getting the right amount of calories and eating the right foods was a priority. Synchronized swimming is a tricky sport to make sure the athlete has the right amount of food energy that isn’t too heavy just before competing. Executing all of the figures takes a significant amount of strength, flexibility and stamina. A major amount of energy is put out in a short amount of time.
The similar thing happens in a basketball game and a volleyball game. Basketball consists of a lot of running, stopping and pivoting. Volleyball consists of a lot of jumping to block the ball, bending to dig the ball, stretching to volley the ball and strength to spike the ball. All those moves require a lot of energy output.
What food do young athletes eat then to sustain their energy but that isn’t too heavy to eat before and during training and competing and is fairly nutritious? I learned about a perfect recipe that is a healthier choice, easy to make, easy to travel with and tastes delicious!
I can’t take credit for the idea of adding vanilla flavoured protein powder to rice cereal bars. I actually learned about it from my daughter’s fitness coach. Rice cereal bars have been around for years and are made with rice cereal and marshmallows as the main ingredient and provide the carbohydrate. Adding vanilla protein powder makes these rice cereal bars more nutritious.
I used to make a big batch of Protein Rice Cereal Bars and individually wrap them up in plastic wrap to sell at the kiosk during tournaments. They were a very popular choice to buy because they were so tasty. The vanilla flavoured protein powder not only adds a protein but also a really yummy vanilla flavour to the bar.
This recipe is also made with extra marshmallows just giving it the right amount of gooey texture and flavour!

Here Is The Recipe For Protein Rice Cereal Bars…
- cooking spray
- 6 cups rice cereal
- 2 tablespoons vanilla protein powder
- ¼ cup butter
- 6 cups miniature marshmallows
- ½ teaspoon vanilla
- Prepare a 9”x 9” or 7” x 11” baking pan by lightly spraying with a cooking spray.
- In a large bowl combine the rice cereal and vanilla protein powder. Stir so both ingredients are thoroughly mixed.
- In a large saucepan melt the butter over a low heat. As butter is melting add the marshmallows. Stir until butter and marshmallows are melted into a white creamy sauce.
- Remove from heat and stir in vanilla.
- Add creamy white marshmallow sauce to dry rice cereal and vanilla protein powder mixture. Combine until thoroughly mixed.
- Spread evenly into the baking pan and let it set for at least an hour before cutting.
