My Favourite Basic White Cake Recipe ~ A basic white cake made with whipping cream! The baked texture is perfect for strawberry shortcake served with a dollop of ice cream or whipped cream.
Hello dear appreciated reader! Thanks for stopping by! It’s been an interesting spring with mostly gardening and trying to get outdoors as much as possible to get some exercise and fresh air. It’s also been a busy June because we experienced some water damage in the basement and the kitchen because of a defective kitchen sink faucet. So I have been busy with insurance and the restoration company getting this mess cleaned up. Both insurance and the restoration company have been fabulous to work with by the way.
So now I don’t have a counter top, my kitchen sink is a temporary laundry tub and everything that was in drawers and cupboards is now in bins and boxes. I feel a bit like I am trying to bake and cook at a camp with this set up. I’ll share some before and after pictures in a future post so you can see all of the excitement that has been going on!

I am talking about one that’s super easy and quick to whip up and isn’t too rich to eat. I recently shared my Slow Cooker Rhubarb Strawberry Sauce recipe and this cake is the perfect partner. Just cut a piece of cake in half, drizzle some rhubarb sauce over both halves, stack the halves on top of each other and drizzle some more sauce on top. Add a scoop of ice cream and ta-da you have made a super easy tasty dessert!
My thinking is that you don’t want a cake that is too rich in flavour because it will compete with whatever sauce you serve with it. This recipe does have a teaspoon of almond flavouring added giving it a nice but not overpowering flavour. I also happen to love anything to do with almonds and eating!
I also don’t want a cake that’s too moist because everything will be too mushy when adding a sauce to it. That’s why this basic white cake is perfect to serve with a sauce and it works really well as the cake part in strawberry shortcake too!
Despite my kitchen being dismantled I was able to make this fuss free basic white cake recipe. I used my mix master to mix the ingredients. You will notice the dry ingredients are combined first and then added alternately with the whipping cream to the egg mixture. No that’s not a mistake. The fat content for this recipe comes from a cup of whipping cream. That’s what makes it fuss free to make. There’s no creaming of butter!

Recipe For My Favourite Basic White Cake Recipe….
- 2 eggs
- ¾ cup white sugar
- 1 tsp vanilla
- 1 tsp almond flavouring
- 1-1/2 cups all purpose flour
- 2 tsp baking powder
- 1 tsp salt
- 1 cup whipping cream
- Preheat oven to 350° F.
- Beat eggs using a mixer till frothy.
- Add sugar, vanilla flavouring and almond flavouring. Beat well.
- In another smaller bowl combine flour, baking powder and salt.
- Add dry mixture and wet mixture alternately in thirds to the egg mixture ending with the dry mixture.
- Pour into a greased 9 x 9 inch baking pan.
- Bake for 30 to 40 minutes or until a toothpick inserted comes out clean.
