Slow Cooker Rhubarb Strawberry Sauce ~
I love growing rhubarb for several reasons! It’s easy to grow and it’s pretty low maintenance to take care of. I love the look of the red stalks and the huge green leaves. It’s a perennial garden plant that comes back year after year. It does a fabulous job of filling up a back corner in my garden. It’s a gorgeous looking plant with little effort put into looking after it!

I also love to bake, cook and eat rhubarb. It’s so versatile and can be used in muffins, pies, cakes, crisps and it can be made into jams and sauces. I also love that you can chop it up and freeze it raw to cook up in the winter. Or it can be cooked into a sauce and frozen for a later use.
It apparently is quite healthy for you too. It’s high fibre, relieves constipation and is filled with antioxidants. The caution with rhubarb is that the leaves are very poisonous so it is the stalk that can only be eaten. I have mentioned it before in the post Tips For Making Your Own Compost where I list what organic things cannot go into the compost and rhubarb leaves are definitely one of them.
Rhubarb is pretty easy to cook. Here I share a recipe for a rhubarb strawberry sauce that you can toss together in the slow cooker in the morning and let it stew for about six hours. It’s also super tasty with the added fresh strawberries and a cinnamon stick. I like to add this sauce to a bowl of vanilla ice cream or served over a white cake with a dash of vanilla ice cream or whipping cream. But I have to admit my favourite way to eat the sauce is mixed in with some vanilla yogurt. The two flavours just seem to go really well together.
One more thing about the recipe. It makes quite a bit so you can freeze some of it for later. I also find that this rhubarb strawberry sauce tastes better the next day because the flavours seem to mesh together into a really nice flavour.
If you don’t have rhubarb in your garden, I know the grocery stores and Farmer’s Markets will have it for sale. Or maybe a neighbour or friend will share their rhubarb with you. I tend to get so much that I will cut a big batch of stalks and bring them into work for my co-workers to help themselves. This hearty plant then revives itself and I will have new stalks and those great green leaves filling my back corner in no time.

Recipe For Slow Cooker Rhubarb Strawberry Sauce…
- 6 cups chopped rhubarb
- 1 cup sugar
- 1 cinnamon stick
- ½ cup white grape juice
- 3 cups sliced fresh strawberries
- Place rhubarb, sugar, cinnamon stick and white grape juice in slow cooker. Stir well.
- Cover and cook on low for 5-6 hours or until rhubarb is tender.
- Stir in strawberries and cook 1 hour longer.
- Remove cinnamon stick. Chill.
