Banana Coconut Walnut Bread ~ I know there are loads of recipes for banana bread. But I really wanted to share my version because it’s easy to make, very moist and very tasty to eat. It’s also a great way to use up overripe bananas.
I love anything made with coconut! In this recipe it adds a really nice flavour and texture. I’m not the only one who loves coconut. This recipe makes two loaves so you will have one baked for now and one for the freezer for the future. It makes a yummy snack with a cup of coffee or serve it to the kids for an after school snack. It’s great to add to school lunches but if your child’s school disallows nuts you can omit them from this recipe. Then you can call it Banana Coconut Bread!
I like to use my food processor to help prepare this recipe. I chop the walnuts first in the food processor and set them aside in another container. Next, I combine all of the wet ingredients in the food processor. This method really purees everything together. Then I pour the wet mixture into a large mixing bowl and add the flour, walnuts and coconut. The wet ingredients are really mixed well along with the dry ingredients. It makes the preparation super easy. I love how the baked banana coconut walnut bread turns out using using this method!

Banana Coconut Walnut Bread
- ½ cup buttermilk
- 1 tsp baking soda
- 2-1/2 cups sugar
- 1-1/2 vegetable oil
- ¾ tsp salt
- 1-1/2 cup mashed ripe bananas
- 3 eggs
- 1 tsp vanilla
- 3 cups all purpose flour
- 1 cup chopped walnuts
- 1 cup coconut
- Preheat oven to 325°.
- Spray two loaf baking pans with cooking spray.
- Add baking soda to buttermilk.
- Combine sugar, vegetable oil, salt, bananas, eggs and vanilla, buttermilk and baking soda.
- Add flour, walnuts and coconut.
- Pour into two prepared baking loaf pans.
- Bake for 60-70 minutes or until a toothpick inserted in the middle of the loaf comes out clean.
- Cool completely before removing from baking pan and slicing.
