All Green Spinach Salad With White Wine Vinaigrette ~ Every nutritional ingredient creates a gorgeous monochromatic green coloured dish to enjoy!
When would this salad be great to eat? It’s the month of March and St. Patrick’s Day is coming soon. Whether you are Irish or not we all have fun with the traditions surrounding this celebration including wearing green and eating green!
The ingredients are spinach, celery, cucumber, green grapes and pepitas. Pepitas are the edible green insides of whole pumpkin seeds. I bought raw unsalted pepitas in the nut and dried fruit section of the grocery store. They are considered a super food because they have high zinc content. They’re a bit high calorie but every calorie is loaded with nutrition. Sprinkling some pumpkin seeds to the salad just before serving adds a dose of protein, yummy taste and a lovely crunchy eating experience!
It’s super fast to make because I used bagged fresh spinach. Just for a change I cut the celery and cucumber in thin diagonal pieces and the grapes just in half. It saved some time cutting because the pieces were bigger and it added a more interesting look to the salad!
It’s the white wine vinaigrette that really makes the difference. When I made this for dinner the other night my younger daughter even commented how particularly delicious it was. Coming from her that’s a fabulous compliment. The vinaigrette is super easy to make and mostly uses handy pantry ingredients. When I make vinaigrette I use a small plastic storage container with a screw on lid. I measure all of the ingredients into the container, secure the lid on top and give it a good shake until everything is well blended or if you use the correct cooking term, emulsified. Or you can also use a whisk to make the vinaigrette in a small bowl.

All Green Spinach Salad With White Wine Vinaigrette
- 1 bag (6 ounces) bagged fresh spinach
- 1 cup celery, chopped
- 1 cup cucumber, chopped
- 1 cup green grapes, cut in half
- ¼ cup pepitas
- 3 tablespoons white wine vinegar
- 2 tablespoons freshly squeezed lemon juice
- 2 tablespoons sugar
- 4 tablespoons olive oil
- salt and pepper to taste
- In a large salad bowl toss together spinach, celery, cucumber and grapes.
- Add white wine vinaigrette and gently toss.
- Sprinkle with pepitas just before serving.
- Combine all ingredients in a small plastic container with a secure lid and shake until blended.
- Makes about ½ cup.
