Apple Oat Bran Pancakes ~ Time for Apple Oat Bran Pancakes! It’s Friday and that means tomorrow it’s Saturday and that means it’s the weekend. On weekend mornings I like to make something a little different for breakfast rather than my usual cooked oatmeal that I like to dress up different ways or my Banana Breakfast Smoothie. Another favourite breakfast food is pancakes. I love making pancakes because they are so easy to whip up and a treat to eat.
These pancakes are quite tasty with the grated apple and just a hint of cinnamon. The oat bran adds a nice texture and a nutty flavour. Oat bran in case you didn’t know is the outer layer of the oat kernel and is a great source of dietary fibre. I don’t know about you but I like to eat foods both for the taste and the texture and these Apple Oat Bran Pancakes have an added bonus of being nutritious.
I also wanted to mention that I cook my pancakes on a Teflon coated griddle that I have had for years. I don’t add any oil, margarine or butter to the griddle and my pancakes never stick. I have to admit I prefer it this way and I save a few calories too! They even look yummy cooking on the griddle!
Just serve these with your favourite sweetener. Here in Canada we love our maple syrup and add some apple slices on the side.
If you end up with any leftover pancakes they make a nice snack later on!
Apple Oat Bran Pancakes
- 1 cup all-purpose flour
- ½ cup oat bran
- 1 tbsp baking powder
- 1 tbsp white sugar
- ½ tsp salt
- ½ tsp cinnamon
- 1 egg, beaten
- 1 cup milk
- 2 tbsp vegetable oil
- ¼ vanilla extract
- 1 cup apple, peeled and grated
- Combine flour, oat bran, baking powder, sugar, salt and cinnamon in medium size mixing bowl. Mix well to blend.
- Combine egg, milk, vegetable oil, vanilla extract and grated apple. Mix well. Slowly add to dry ingredients, mixing well until well moistened.
- Pre-heat griddle or large frying pan over medium heat. Pour ¼ cup batter on griddle for each pancake. Cook until large bubbles appear on surface and edges are slightly browned. Turn over and cook other side until brown.
Actually, these Apple Oat Bran Pancakes really are easy to make and tasty to eat any morning for breakfast!
