Cherry Chocolate Chip Cookies ~ A tasty soft chocolate cookie made with added chocolate chips and infused with a delicious cherry flavour.
With Valentine’s Day coming up I thought this would be the perfect time to share my Cherry Chocolate Chip Cookies recipe. Although you can make these yummy cookies any time of the year there is something about red cherries and chocolate that go so well with Valentine’s Day.
I have to say these are very ‘chocolately’ with the chocolate flavour and textures coming from the cocoa and the chocolate chips. This cookie is also soft to bite into creating a delightful melt-in-your-mouth chocolate experience!
I think a good quality cocoa is worth the price and I like to go with a product that’s in the chocolate business. So I made these cookies with Hershey’s Cocoa.
The chopped maraschino cherries add nice little red flecks making this cookie quite pretty. I recommend chopping the maraschino cherries in a food processor using the pulse feature so you can chop them fairly evenly and finely.
The next best thing is that these cookies are super easy to make with just a few steps. I do all of the mixing in my stand mixer. I also like to sift the dry ingredients together through a strainer before adding it to the butter, sugar, egg and vanilla mixture.
This recipe makes about 24 cookies. They freeze well but the problem is that whenever I make them in my house they don’t last too long!
Recipe For Cherry Chocolate Chip Cookies
- ½ cup butter
- 1 cup sugar
- 1 egg
- 1 tsp vanilla extract
- 1-1/2 cup flour
- ⅔ cup cocoa
- ½ tsp baking soda
- ½ tsp salt
- 1 cup maraschino cherries, well drained, chopped
- 1 cup chocolate chips
- Heat oven to 350°.
- In large mixer bowl, beat butter and sugar until light and fluffy. Beat in egg and vanilla.
- Stir together flour, cocoa, baking soda and salt. Stir into butter mixture.
- Stir in chopped maraschino cherries and chocolate chips.
- Drop by rounded teaspoonfuls onto cookie sheet.
- Bake 10 to 12 minutes or until set. Cool slightly, remove from cookie sheets to wire rack to cool.
