Easy Oven Beef Stew With Red Wine ~ There’s nothing like a hearty healthy stew when the ground is covered with snow and it’s chilly outside. This Easy Oven Beef Stew With Red Wine is super tasty and it adds a wonderful aroma to the house when it’s baking in the oven. This is totally my idea of comfort food on a cold winter day.
It ‘s loaded with yummy healthy vegetables and when served with a slice of bread or a roll it makes a complete balanced meal. Oh yes, it has a cup of red wine. Now you can serve this stew to the kids because the alcohol in the wine cooks out during this longer baking time. The wine just gives the stew more taste. What types of wine are considered to be dry? The answer is any red wine that is not sweet. I used a Merlot but you can also use a Malbec, Chianti or a Cabernet Sauvignon. One more thing, there’s a saying to never cook with a wine that you wouldn’t drink. I used to think that I could use a more inexpensive wine because I was just using it in cooking. I know now that Julia Child would be so proud!
I also used to buy pre-cut stewing meat thinking I was saving time. But I don’t know about you but I find that this meat comes in all different sizes and shapes and I have to go through it anyway to make things more uniform as well as cut away the fat. Now I buy a cheaper cut of steak like a round steak and cut it up myself. It really doesn’t take that much more time if you use a good sharp knife and work with partially frozen meat.
I also love this recipe because it’s pretty low maintenance to prepare. After all of the chopping is done and the ingredients are thrown into the oven you can forget about it till super time. So you do have to be a little more organized and start preparing the recipe in mid-afternoon if you plan on eating it at dinnertime. This is also one of those dishes that tastes better the next time. Lucky thing it makes a big batch so you can count on planned leftovers.
One more thing, I don’t have a large Dutch oven so I just use the ceramic pot with the lid from my large slow cooker.

Easy Oven Beef Stew With Red Wine
- 2 tablespoons olive oil
- 2 pounds boneless beef stew meat cut into 1-inch cubes
- 1 can (28 ounces) diced tomatoes, undrained
- 1 cup beef broth
- 1 cup dry red wine
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1 tsp salt
- ½ tsp pepper
- 6 potatoes, peeled and cubed
- 3 large carrots cut into 2-inch pieces
- 3 ribs celery cut into 1-inch pieces
- 1 large onion, peeled, cut into 1-inch pieces
- ⅓ cup instant tapioca
- Heat oven to 325 F.
- Brown beef in olive oil in a large skillet.
- Combine all ingredients in ovenproof Dutch oven. Cover.
- Bake 2-1/2 to 3 hours or until meat and vegetables are tender.
